You/and you

Hey! How are you?

I'm just fine.. you?/and you?

I know the best way to ask something back, would be "What about you?". But, is there any other way just like this one? and between "You/and you", what's the most formal?

I'm just fine.. you?/and you?

I know the best way to ask something back, would be "What about you?". But, is there any other way just like this one? and between "You/and you", what's the most formal? Neither is particularly formal. More formal would be to reply with 'How are you?'
