As you drive or walk along the streets in almost any city, you can't help but notice that there are signs everywhere: store signs, street signs, and traffic signs.

I suspect if the part in bold convey the same concept as the following:

you can't but notice
you can't have choice but to notice
you have no choice but to notice
you can't do nothing but notice

Are they about the same in sense to you? Thanks.

you can't have choice but to notice - not grammatical
you have no choice but to notice - yes
you can't do nothing but notice - not grammatical and not the same meaning
