Writing about Bug Quiche?

I want to write an essay about an article.
In the article, a Dutch professor is urging the public to do many things. He wants people to namely cut the carbon-print that eating chicken and beef is making through an avoidance of these meats. He proposes to do this, you should eat worms. He has promoted restaurants that now serve quiche-cricket and worm. He says that this would save people alot of money and pollution.

How would I come up with the first two introductory sentences?
I'm an ESL helper; I help people with pronunciation and I moonlight in other things.
