wound around a spit

The penguins realy take care of you. Three squares a day and a place to live and I love their religion. I love all the bloody Saints. I mean, they're in pain, but they're really digging it, you know? I figure if you can look up to heaven and smile while you're having your guts pulled out and wound around a spit, you got a good thing going, you know?

What does the part in bold mean? Thanks.

It's saying that if you have a really strong religious belief, you can put up with anything that is done to you.

Got it.

By the way, what does "wound around a spit" mean litterally?

A spit is a long metal pole that meat (often whole animals) is 'spitted' on then roasted over a fire. They are imagining one of the tortures that saints go through.
