DearI used to have for dinner at my relatives house on summer vacation.  As was the custom in my ancestor, my uncle called all children and taught a special song for celebration coming Thanks Giving Day.  We loved that, But the Days were not always good at my uncle  as some children were not polite to him.  Now he is gone and I miss so much the days singing at his house.

You could say, "the days of singing," or "those days of singing," or "those days, singing," but not "the days singing." It's not ungrammatical, but I think it's awkward.

You could also say, "I [often] used to have dinner at my relatives' house during summer vacation(s). If it's one long vacation, it's not clear if you did it every day, or perhaps just once for this special holiday. (That's why I suggested "often.") We have dinner. We go for dinner.
