Would vs will

Why do we write "would" in this sentence and not "will" ?

2-Something that I would miss is my mom's cooking.

Is it correct to say : Something that I will miss is my mom's cooking.

2- I would never forgive you,is this question correct ?,can we say I will never forgive you ?

When do we have to use "would" instead of "will",in which situations ?
