Would vs used to

I was happy when Sam left. He would talk about people behind their backs. Can we replace 'would' with 'used to' in the sentence?

I'd just like to go on record saying that I fail to perceive a difference between "would talk" and "used to talk" in that context. It may be there, but I can't convince myself of it.

To me, they are interchangeable in this context:

When I was a child, we [would] / [used to] go to Grandfather's farm every summer for vacation.
