How to prepare your favorite dish
Steamed fish is my favorite dish. Careful following the procedure of preparing it is the key for the great flavor. The first step is to prepare all the ingredients needed, which could be cooking oil, cooking wine, vinegar, 50g chives, 50g ginger, 600g fresh – better carp, 50g garlic, 80g mushrooms, 50g red dates. Second, immediately remove offal of this fish and clean the remaining part, on which surface will be set aside 4 or 5 bars - 3cm deep, 5cm long holes. Third, put it in a bowl, scattering salt over the fish, and pouring 40g cooking wine and vinegar over it, covering it with any lid available to you, leave it there, lasting for 10minutes. Forth, pour 150g cooking oil out into the pot and heat it. Do not add chives, ginger, garlic and such ingredients in the pot until the cooking oil hot enough. And then, put pure water enough to overflow the fish body, cooking this mixture with intense fire until the water start boiling. Next, switch it to low-fire, keep boiling it. As the time goes by, the soup will become white. Finally, it can be served.
