It seems that the verb 'prefer' very often follow 'would'. What is the difference between 'would prefer' and 'prefer' itself?

I prefer shopping online.

I would see 'would prefer' as a form of politeness. Also, if you want to say something strongly, you could use 'prefer' rather than 'would prefer'.
