Would or should? what does the first short dialogue mean?

—The grapes look really beautiful.

Yes, you are correct. One would not say How is your tour...

I think, however, with the sloppy diction in the U.S., How was probably would come out sounding like How's [pronounced like How'uz].

They should! = The grapes should look really beautiful! = A person is well justified to expect these grapes to look really beautiful considering the price.

Changing the dialogue to the past tense, while possible, is not really necessary. Just imagine it as a phone call to the person currently visiting North Lake.
