I understand we can use should. But, in the context, I am trying to tell somebody what we would start a conversation with when we met people.

Why is the first one incorrect? Would is supposed to go with past, right? Not present? like: 'If you met him here what would you do?' Not 'if you meet him here what would you do?' I am confused.

You would say 'hi' when you met new people. Why is this incorrect? Here both 'saying hi to new people' and 'meeting New people' is imaginary. So, if 'saying hi' is imaginary so it goes with would then why

Because I cannot think of a reasonable context in which I might say that. If you are giving advice, use "should."
If you are giving advice by saying what you would do in that circumstance, then use the alternate suggestion.
