I would like to know the meaning of "I would never do that" in the next passage.

It was the hottest day of the year. Uncle Joe was wiping sweat off his face when he came into
the house. “Ken, did you let the air out of two tires on my old truck?” he asked me.
“No, I would never do that,” I replied.

I am not the kind of person who would ever do something like that. Perhaps present unreal: If such an opportunity OCCURRED, I WOULD never TAKE advantage of it.

You could also say, "I would not ever do that."

Letting the air out of tires is not something that I would do under any circumstances.

That still uses the word "would", however.
