Worth his slat carries...?

Hi,

Could you help me with this one?

Every bartender worth his salt carries a trivia answer book ,a joke book and a cocktail reciepe book with him.

I can't understand the bold part..First,worth is an ajective,but where is BE VERB here,shouldn't say every bartender is worth....? Second,what's salt carries a trivia answer book...?;-(
