Work off the books?

Hello everybody.

I have two questions.

Would you please help me?

What 'work off the books for a restaurant' in the following mean?

My mom forbids my sister to work off the books for a restaurant.

And my second question, in the following does the writer herself is growing wings or she is on a bird ?

I pictured my self being saved by some gravitational reversal and sprouting wings that would carry me from this place until I found myself among other migratory beings bound for somewhere that feels like home.

Thanks so much.

You are really a great help.
