B: Sorry, my watch won't/doesn't work.

B: Sorry, my watch won't/doesn't work.

my watch won't work. Suggests that I am trying unsuccessfully to make it work.

my watch doesn't work. Does not suggest that I am trying, Just states a fact about the watch.

Anyway, I would have said, "My watch isn't working" in the first place, i.e., neither of the choices suggested.

It would be more natural to say, "My watch is broken," but of the two choices you offer, doesn't is better because it states the simple fact while won't implies that you have been trying to get it to work, which may be true, but is not something you would answer the question with.
