Are these sentences correct:

1-With my high blood pressure, I try to eat as healthily as possible.
2-With my high blood pressure, I eat as healthily as possible.
(Meaning: Because I have high blood pressure, I try to eat/eat as healthily as possibly.)

I think a better way to express your idea would be to use because of or due to.

Because of / Due to my high blood pressure, I try to eat as healthily as possible.

Here, I would have simply said:
Because of / Due to my high blood pressure, I (try to) maintain a healthy appetite.
