Can you, please, tell me which sentence is better or perhaps suggest a better version?

1) Meat is minced in cutter and homogenised with the addition of nitrite salt, additives, spices and part of ice/water until a homogeneous emulsion is achieved

2) Meat is minced in cutter and nitrite salt, additives, spices and part of ice/water are added until a homogeneous emulsion is achieved (until the emulsion has become homogeneous).

"and part of ice/water" is not natural. You don't actually mention a mixing process. Is the ice/water gradually added, or is a prescribed amount introduced with the other ingredients?

I think since you refer specifically to the cutter, you should also mention the mixer, if there is one.
