The first sentence is not natural. The second is fine.

If you replaced the second "I" in each sentence with "you", you would get correct sentences, but the meanings in each pair might differ.

1. I wish you would go on holiday to Paris. (depending on context, could mean either I wish you would go on holiday (instead of staying home), or I wish you would go to Paris for a holiday (instead of somewhere else). Both of these would commonly refer to a single holiday, though the second could refer to a wish that going to Paris would become the person's usual habit)

2. I wish you went on holiday to Paris. (This would mean I wish that going to Paris for your holidays was your usual habit)
