1. It is short for "I wish they could see ...". He is being sarcastic (or self-deprecating). He is supposed to be famous, but right now he has to do unbefitting household chores.

2. "shade" means a place not in direct sunlight. He is glad to get out of the hot sun. The kitchen is "gleaming" because it is so clean (presumably).
