Why to put exactly adjective order?

She has straight long black hair.
She has thick long black hair.
Is the adjective order in the two sentences above right or wrong?

They sound all right to me. You could reverse the order of the first two adjectives without creating bad sentences. All four below sound all right to me.

She has [straight long / long straight / thick long / long thick] black hair.

When using multiple adjectives, I usually put the uncommon ones first to catch the attention of the listener. In a group of blonde ladies, black hair would be significant. Among curly haired individuals, I would put ‘straight’ first.
My first choice would be “straight long black” (physical attributes then colour).
