Why one is better than the other?

Hi,

1. I have two sentences below with the words (I they are variable nouns) and want to know why they use the genenal uncountable form when the alternative individually considered countable noun form seems to prevail just as well. I am asking this because when I see similar sentences I am likely to choose the latter one and that doesn't seeem good. Help me to see straight (not that I cannot see straight visually) so I can make better the (a???) better decision next time.

He uses both his physiognosmic features and his transient expression to convey ... (why not expressions???)

... intend to reduce their numbers or stop their use. (why not their uses???)

2. Is the underlined part correct? Why do you need "one" there?

... and also for one another's prayer.
