Why do we need to use either?

-I would like some tea or coffee.

-I would like either some tea or some coffee.

-He or she has to go there.

-Either he or she has to go there.

-I want to know if I sould either do this or be quiet.

-I want to know if I should do this or be quiet.

-I want to know whether I should do this or be quiet.

-I want to know if I sould go there or if he is going there.

-I want to know if either I should go there or he is going there.

-I want to know whether I should go there or if he is going there.

I would also like to know if all these sentences have the same meaning and if they are all written well (well written?).

But couldn't you just say:

-I would like either tea or coffee.

What's the difference to:

-I would like tea or coffee.

What is the either doing there.
