Why are these verbs in plural form & not singular?

He does not exercise regularly.

Does he play the piano?

Jane doesn't have breakfast everyday.

Plural form is a misnomer. The highlighted verbs are in the "infinitive" form. They remain that way because that's how they are constructed in a negative sentence or a question formed by the auxiliary verb “do”.

We could still have "s" in many verbs in a sentence if they share a singular subject. For example, she watches movies, talks
