Why are commas used here?

That water has a very high specific heat means that, without a large temperature change, water can add or lose a large number of heat.
Why were commas used? (in ", without a large temperature change,")
I think they can be ommited, can they? if not, why?

Yes it should be "amount" instead of "number". This was a question about correcting the wrong word. I've put incorrect form.

"heat" and "temperature" are different in physics. I don't know what it exactly means, but it depends on what the terms exactly mean in physics.

How about the other sentences? And most importantly the last question.
