Who are you?

A: Who are you?
B: a) I am Tom.
b) I am a student.

A: What are you?
B: a) I am Tom.
b) I am a student.

When someone asks "Who are you?", can I say, "I am a student." and "What are you?" sounds somewhat rude, doesn't it? Thank you so much in advance.

I agree with Anonymous, though. To ask someone, 'what are you?' does sound rude. They might be trying to figure out your nationality. They should ask in a different way.
