Which word or phrase can express ΔU?

I don't know which word or phrase have the meaning that the voltage changes from one point to another point, for example, the voltage of the potentiomter changes from 20V to 10V, ?U=20V-10V.
So which word or phrase can express the ?U? Can I just use "voltage change"?
The meaning in Chinese is "dian ya bian hua liang".

"Potential difference" is another term for voltage, it is not a change in voltage. Use "change in voltage" or "delta U" (whatever "U" is). "Voltage" is actually a layman's term, though. "Change in potential" is more technical.

"Voltage drop" is what you get across an impedance. It is the difference between the potential on one side of an impedance and the other. That probably is what the OP means by "the voltage of the potentiometer", now that you mention it.
