These last couple of months have been hard for/on me. (I'd say both but with a slight difference in meaning. Let's wait for a native speaker to judge it.)

I don’t like him seeing me doing/do that. (Both are possible, I guess, but with a difference in meaning. In most cases it would be "do", though.) [I assumed you meant 'like'; I think that it would be better to say: I don't like it when he sees me do/doing that]

I told him how I’m in love with him.

It's hard for me not to be rude./ It takes a lot of effort for me not to be rude.

used to come (some used would, but I don't)

hard for me (hard on me: they have made me weak)
