When should I use:

Jacky has visited Gambia.

and:

Jacky visited Gambia.

You use the simple past ( Jacky visited Gambia ) when you want to state the fact that his visit occurred at a precise moment in the past, no relationship to the present. You'll use the present perfect ( Jacky has visited Gambia ) when there's a relationship to the present. Jacky has never visited Gambia = so far, up to now Jacky has already visited Gambia = at some unkown time from his birth till now Jacky has visited Gambia = so he knows what it's like, he can tell you about it.

The questions are grammatical. Is that what you wanted to know?

Has Jacky visited Gambia? = Has he visited Gambia at any unprecised time from the day he was born till now?

Did Jacky visit Gambia? I would add the word "then". You use that sentence when you're talking about a specific moment in the past, for example "Did Jacky visit Gambia during his stay in Africa?".
