Which or that?

Hello,

Some visitors ignored the notice in the art gallery -------- said: "Don't touch the paintings."

The little girl was badly injured when the car -------- she was driving hit the oil truck.

Studies have shown that green tea has a high percentage of antioxidants ------------ help keep a person's body healty.

I think both "which" and "that" complete those blanks above. In my grammar book's answer key there is only which. I don't know why they exclude "that". What do you think?

Both are 100% correct; in fact "that" is probably more common.

The traditional rule (which is by no means always followed) says that "that" is used for defining clauses, and "which" for non-defining. However, non-defining clauses are normally set off with commas. If commas are not used then the non-defining intention can become unclear. Therefore I see little difference in meaning between "which" and "that" in these examples. If commas are added then things c
