This is a hard one to explain.

"I can't stop" can be a sentence all by itself. I can't stop what? (doing something)

"Doing" is a "verbal." Different main verbs take different verbal forms. "(to) love" is one form (the infinitive).
"Loving" is another form (the present participle).
Some main verbs can be followed by either one of these verbal forms.
I tried loving this game. I tried to love this game.
But the combination "I can't stop love" is just not in the language for the meaning you intend.
