The correct English is 'If I were to...' because it indicates something that is unlikely to happen. The verb in the concluding sentence is always 'would...'. eg If I were rich, I would be living in Honolulu' (but you're not and it's very unlikely you will be). It's called 'Future improbable' in grammar.

Both are considered correct. The subjunctive "were" is used in many special cases, but is losing popularity and may optionally be replaced by the simple past.
