Would it be appropriate to re-write this sentence as...

"I don't know when she is getting used to this"

Do they have the same meanings?

These are not really very good sentences. You need something different:

I don't know when [she'll / she will] get used to this.

(You don't know at what time in the future she will become [familiar with / accustomed to] something.)

getting used to won't work. No.

get used to is OK in some contexts, not in others. For most simple constructions, get used to in the simple present doesn't work. To use the simple present, you need something like a whenever clause.
