Normally it would be "Let's see how interesting this book is" (note, no comma).

The other word order may be possible, especially in speech, if two thoughts are joined by a pause, but the punctuation would need to be changed. It might be transcribed, for example, as "Let's see ... how interesting is this book?" or as two sentences.
