Which is more suitable?

Once they find out how arrogant you are, they won't want to be your friends OR Once they found out how arrogant you were they wouldn't want to be your friends.

This one is more direct. It's more certain that they are going to find out. I would use this one.

The other version shows less certainty. In that sentence you're saying that they might not find out.

It depends. The first one implies that "they will find out" whereas the second one makes no such prediction and simply states the consequences of them finding out.
