Which is more accurate grammatically?

You would've never signed those papers, if you knew/had known what was going to happen.

I'd use "had known."

As an aside, I prefer "You never would've signed etc."
I can't say that yours is incorrect. Perhaps someone else can.

I'd write this:

You would never have signed those papers if you had known what was going to happen.
