Which is correct "-" or "are"?

The below sentences are from "The Art of Travel by Alain de Botton
." The problem is it has two versions about the quotation from the book.

One has dash (-) following "tasks," the other has 'are' in place of dash.

Which one is right, or are both correct?
To me, it seems the fomal is right, and the version with 'are' is incorrect.

Thinking improves when parts of the mind are given other tasks - charged with listening to music, for example, or following a line of trees.

Hi, This use of a dash is OK, but to my mind dashes often make a sentence seem less than formal. They often mean 'Oh heck, I'll just let the reader figure out what I mean, because I can't be bothered to write it better'. The use of 'are' is more correct.
