Which expression using the word half should I use?

If you drop a coconut fruit, you see (only a half of it, a half of it only), but if you flip it onto the other side, you'll see (the other half, the other half of it).

If you mean the thing with a hard, brown husk with fibers attached, that's just a coconut. No need for "fruit."

It seems a strange thing to say. Unless you hold a coconut (or anything else) in front of a mirror, you see only one side of it anyway.
