Starting might work, but I would write it thus:

The lecture, which started at 7:00 p.m. last night, was followed by an observation of the moon with telescopes.

Take out the commas, and make a compound predicate:

The lecture started at 7:00 pm last night and was followed by an observations of the moon with telescopes.

If there is more than one telescope and more than one person, there will be more than one observation.
