whether (more than 2 options)

Is it correct to use whether when there are more than two options? For example: "whether we go to A, B or C, such and such is inevitable.". Or what would be a better way to structure the example sentence?

What you've written sounds fine to me. If you don't need to actually list the 3, you can say "Such and such is inevitable, whatever the final choice is."
