That "but" strikes me as a curious thing to say. Do you think it's odd or unusual that that a "simple" screenplay could be made into a great film? Don't you think maybe the simpler - the more straightforward, the easier to read and absorb, the more directly emotionally involving - the screenplay,

No.
I strongly encourage you to read screenplays to films you haven't yet seen. Otherwise, you'll often find it's hard to separate the script from the film.
