"when you know" Vs. "Knowing"

1."Why would you take a big risk when you know you have a minimal chance to succeed?"

2."Why would you take a big risk knowing you have a minimal chance to succeed?"

I assume that "when you know" can be substituted by "knowing" but is it only applicable when the sentence is a Why-question? And can this substitution method be applied to other verbs as well such as

"when you have" Vs. "having"

"when you see" Vs. "seeing"
