When to use and omit "the" before "temperature"

1. variable noun
The temperature of something is a measure of how hot or cold it is. ? The temperature soared to above 100 degrees in the shade. ? The temperature of the water was about 40 degrees. ? Coping with severe drops in temperature can be very difficult.
I saw the above definitions for "temperature" in ( should say at?)Collins
dictionary .
Why have they used "the" before temperature in the 1 and 3 example but no "the" in "Coping....very difficult"?
What do they mean by "variable noun"?
I would appreciate if someone explain the rule when to use "the" and when to omit as in the 2 example.

    I just saw the above example should say at or in Learners dictionary.

    if temperature is a countable then why "the water temperature"? why cannot we say "a water temperatur? I just want to learn the articles for my IELTS writing. Thank you

You can. it requires a context where the water is not some specific body of water.

Red wine is best served at a temperature of about 45 degrees.

There are many instances of red wine. You are talking about any red wine, no matter if it is a Shiraz, Claret, Merlot or Cabernet.
