When I hear one?

Hi! everyone.
Could you rephrase these sentences? I could not understand them?
-I can recognize a challenge when I hear one.
-I know a lie when I hear one.
and also this one-Now there's a challenge if ever I heard one.
What does the above sentence mean? And when do we use "if ever"?
