When do we use present simple to talk about the future?

I know we can use pres simple to talk about the future, but i dont know when. when do we use it?

Yes, "taking" is ambiguous. It can describe a condition, as in "I'm not taking my vacation this year."

It seems to me that we don't use it that often, and when we do, it's about something we consider a fairly major event that occurs on a fixed schedule that has already been arranged earlier.
