When do I have to use "of" and when don't.

Hello,

I'm italian and I'm studying English grammar.

As the title says, when do I have to use the "of" preposition.

I have these two phrases :"the color of the text is red" and "The text color is red".

Are both grammatically correct? The second seems a saxon genitve without the 's a the end of the word text, but I know that is not saxon genitive( or English possessive, I don't now how you called this form).

If the seconds phrase is correct I would know the reason and in what cases I should use the phrase with the "of" preposition.
