WHEN and WHAT (whats the longest you've gone without...)

Could you please help me with these sentences?

1 When you are drunk is when you express yourself the best.
2 Whats the longest you've gone without eating?

Could you tell me how to say these 2 sentences please?

- I could see the reflection of the light off/on/in the building.
- Be careful not to splatter water everywhere/not to splatter the place with water when doing the dishes. Make sure the water pressure isn't too low.
