What/which

Hi;

What/which article should I use before (something)?

Imagine that I just saw someone playing a random game on their iPhone.

What/which game are you playing?

I know that we use 'which' when a choice has been given, but is that always the case? Should I always mention choices that the speaker have when using 'which'?
