what's these structures ?

Hello everyone
can you teachers tell me what's these structures?
1-Not once did she warm me to bring my umbrella
should above example be something like this :
she didn't once warm me to bring my umbrella ?
and what about the second example, by example I mean :
2-Never have I known such an incompetent secretary.
can this example be something like this too ? :
I have never known such an incompetent secretary
if my opinion is right just please clarify me why those structures are in such form ?
