Is this something that can be said?
What we do for our kids. (said while doing something amazingly nice for their kid) Do you have to say anything else or does it stand alone?

It's possible on its own said with the meaning of something like "It's amazing/surprising/wonderul/silly what we do for our kids." It can be uttered as an exclamation, a statement of resignation, pleasure or a number of other things. You'll also hear "The things we do for our kids!"
