what or that which

Is it a right structure?
That which is a cat for a mouse is a stork for a frog. (I mean it is a similarly mighty enemy for it.)
That which is cake for us is cheese for Joe. (It counts as a dessert for Joe.)
Or should I say "what" instead of "that which"?
